Go To Chicken Noodle Soup





Ingredients
2 Chicken Breasts (boiled and cubed)
2.5 Quarts Water

1/2 Stick Butter
2 Tbsp Canola Oil
1 Onion Diced
2 Cloves Minced Garlic
1 Tbsp Black Pepper
2 Carrots Sliced
4 Cups Water
1/2 Package Farfalle Pasta

Hubby wasn't feeling well, he's got a Sinus infection :( so I asked him what he wanted for dinner and he said Chicken noodle soup, so that's what I made him ;)


In a 3 Quart Pot boil 2.5 Quarts of Water and add your Chicken breasts whole. Cook them all the way through. Remove the Chicken Breasts and cut them into cubes.

In the mean time in your BIG soup pot put 1/2 Stick butter and 2 Tbsp canola oil in and heat on medium. Again this keeps your butter from browning too much.
Then add your onion and cook for 5-7 minutes. Stirring occasionally. Add your Garlic and cook for another 2 minutes.

Add your sliced carrots ( I don't like to add these too early because I hate them soggy, gross!).

Take your simple chicken stock that you just made by boiling your chicken and pour it into the onion, garlic and carrot mixture.

Add your chicken, water, pasta and all your seasonings.

Cook for 15-25 minutes or until pasta is at your desired tenderness.

Enjoy with some bread and butter or a biscuit.

Pepped up Rice



Ingredients
1 Cup Rice
2 cups water
1/4 cup Green olive juice
1 tsp Garlic powder
1/2 Cup Cheese ( I used mexican)

Ok so clearly I've been busy as my posts have reflected. So things have been pretty easy. I just wanted to play around with the rice.

So when I cooked the rice I added 1/4 cup Green olive juice to the water. It's VERY subtle and Id be surprised if people could put their finger on it unless they saw you put it in there.

After the rice is cooked add your garlic powder and cheese and mix well.

I don't think it could have been any easier and I promise I'll post up some real recipes soon! Look for a good ole fashioned Chicken Noodle Soup tomorrow!

Peppery Sausage Casserole

Usually most of my creations just come from my brain, on a whim or me looking at ingredients and trying to figure out something new to do with them. This is one of those brain-childs.

Ingredients
1 Package Hot Turkey Sausage, casings removed (do this while it's still not completely thawed)
1 1/2 cups Rice (not quick cook) I used long grain
1/3 Cup + 1/2 Cup Banana Pepper Juice
1/2 Bag Frozen Peppers/Onion Mix (or 1 1/2 Bell Pepper Sliced)
1/2 Onion Sliced
1/2 tsp Red Pepper Flakes
1/2 tsp Black pepper

Servings: 4

Heat a large skillet over medium to medium high heat. Take your sausage and slice through the casing longways and remove meat from the casing. Place it in the pan still in link form. Do this for all 5 links.

In the mean time start to cook your rice, follow the directions for making 1 1/2 cups rice (which for me was 3 cups water) I used 2 1/2 cups water and 1/2 cup Banana pepper juice. But I think the rice was a touch too salty so I'd drop it down to 1/3 cup Banana pepper juice and 2 2/3 cup water.

Cook rice as you normally would, it will have a yellowy-greenish color. That's ok, banana peppers are that color!

My inspiration- Mild pepper rings (well the juice anyways)

Chop onion and add it to your pan as well as your peppers/onion mix. Add black pepper and red pepper flakes and cook, stirring occasionally until meat is cooked through and all vegetables are tender. As the cooking time ends add 1/3 cup of the Banana Pepper juice to the pan and allow it to incorporate.

When everything is finished cooking just combine in your rice pan and enjoy a nice big bowl.

I thought this was really good, but like I said I thought a touch too salty. That being said hubby loved it (he loves salty food) and said it was perfect.

So if you have some leftover pepper juice that you don't want to throw away, give this a try, you won't be dissapointed!

Hodge Podge Lunch at G-Ma's



This is a 2-fer meaning I'm going to use a little more than half of my meat for the next dinner. So i'll adjust the ingredients as necessary.

Ingredients
2 lbs lean ground beef (I used 93/7) (3/4 lb for just this meal)
1 Tbs Garlic Pepper (1/2 T)
1/2 T Garlic Powder (1/4 T)
1/2 T Curry (1/4 T)
1/2 T Cayenne (1/4 T)

1 Box Rice-a-roni Chicken flavor (Fry's Brand)
1 Packet Rice Sides Taco Flavor
2 Cans Corn
Canola oil
Shredded Mexican cheese
Heat a large skillet on medium high heat and then add a drizzle of oil for browning the meat (If you are using a larger fat blend you probably wont need it. Add the beef to the pan and break up. Add all spices and cook for 5 min on medium high, flip meat when browned and decrease heat to medium (or medium low).

In a large pot cook your rice to the package directions (since this was a hodge podge I didn't have the same brand, so I had to add half of the rice halfway through the cooking time. In an ideal world I would have had the same. Cook it until it is nearly done, in the last 3-5 minutes add the corn to the mix. Then at the end add your meat (3/4lb). Stir up.

Add mexican cheese on top and stir up and serve. Mmm I forget how much I love curry.
We had a very relaxing day of sittin on the porch swing and playing rummikub with G-ma with an easy hot, comfy meal.
