Homemade Calzone's



Ingredients
1 Pillsbury pizza crust
1 package light sausage ( the kind you only have to warm through), sliced about 1/2" thick
Pepperoni
Cheese ( I used Mexican)
Tomato Sauce
Onion Powder
Garlic Powder

As you can tell I'm still loving the Pillsbury sale!

Pre-heat your oven to 400*

Roll out the pizza crust so it is about 1/4-1/2 " thick. Then cut into 4 pieces using a pizza cutter.

On a baking sheet with aluminum foil place one piece of crust on top. On one end add 2 Tbsp Sauce, onion powder and garlic powder to your liking. Then top with a few pieces of pepperoni and lots of sausage. Top with Cheese and fold the rest of the dough over. Press together to form a calzone.

Now take a knife and make breathing holes for your calzone on top. Spray with cooking spray so they will brown up nicely.

Do this with all 4 calzones. Toss them in the oven and cook for about 15 minutes or until golden brown.

Allow to cool for 5 minutes and enjoy!

Peppery Sausage Casserole

Usually most of my creations just come from my brain, on a whim or me looking at ingredients and trying to figure out something new to do with them. This is one of those brain-childs.

Ingredients
1 Package Hot Turkey Sausage, casings removed (do this while it's still not completely thawed)
1 1/2 cups Rice (not quick cook) I used long grain
1/3 Cup + 1/2 Cup Banana Pepper Juice
1/2 Bag Frozen Peppers/Onion Mix (or 1 1/2 Bell Pepper Sliced)
1/2 Onion Sliced
1/2 tsp Red Pepper Flakes
1/2 tsp Black pepper

Servings: 4

Heat a large skillet over medium to medium high heat. Take your sausage and slice through the casing longways and remove meat from the casing. Place it in the pan still in link form. Do this for all 5 links.

In the mean time start to cook your rice, follow the directions for making 1 1/2 cups rice (which for me was 3 cups water) I used 2 1/2 cups water and 1/2 cup Banana pepper juice. But I think the rice was a touch too salty so I'd drop it down to 1/3 cup Banana pepper juice and 2 2/3 cup water.

Cook rice as you normally would, it will have a yellowy-greenish color. That's ok, banana peppers are that color!

Chop onion and add it to your pan as well as your peppers/onion mix. Add black pepper and red pepper flakes and cook, stirring occasionally until meat is cooked through and all vegetables are tender. As the cooking time ends add 1/3 cup of the Banana Pepper juice to the pan and allow it to incorporate.

When everything is finished cooking just combine in your rice pan and enjoy a nice big bowl.

I thought this was really good, but like I said I thought a touch too salty. That being said hubby loved it (he loves salty food) and said it was perfect.

So if you have some leftover pepper juice that you don't want to throw away, give this a try, you won't be dissapointed!

Sausage Milk Gravy and Biscuits

So again I have to thank Christy at Southern Plate for this recipe, it turned out absolutely spectacularly! check out her recipe here Sausage Milk Gravy Recipe , I modified it slightly

Ingredients
1 Package of Mild Italian Sausage (out of casings)
3 Tbs Flour
1 3/4 Cups Milk
Salt and Pepper to taste

Heat a large skillet to medium heat and place sausage into the pan. Break up into pieces and cook until it is no longer pink. When fully cooked remove only the sausage onto a plate covered in paper towel (leaving all the sausage fat in the pan).

Turn to medium low heat and add 3 T of flour and cook until a light brown. Add your salt and pepper to taste and be sure to make sure you get all of the drippings from the bottom of the pan, because this is your flavor for the gravy. Add the milk and continue to heat until it thickens. Depending on how thick you like your gravy you can cook it longer or add more milk.

Then take your broken pieces of sausage and liberally add to your gravy. Then spoon over fresh biscuits and enjoy.


This gravy was spectacular, the pepper gave it a nice kick and the mild italian sausage paired nicely. Hubby even asked for a spoon so he could get all of the gravy out of his bowl!
